Chocolate Chip Frosted Blondies


After my success with the Chickpea Chocolate Chip Cookies, I decided to make them into blondies and see how they fare. Same great recipe, different final result.  

Not pictured here (because I may or may not have eaten them all before remembering to document my food, “living in the moment” or whatever they call it) is the chocolate avocado frosting I made to go on top! I was loving the combo of healthy proteins from the chickpea blondies with the healthy fats from the frosting!

This frosting would also be great on sweet breakfast toasts, crepes, banana bread, cupcakes, or right off the spoon. 

Chocolate Avocado Frosting :

• 1 ripe avocado

• 5 medjool dates (or more if you like it sweeter) 

• 1/4 cup almond milk

• 1/4 and 2 tsps cocoa powder  

Blend all in food processor and refrigerate for about an hour to firm it up.
