Persimmon Oatmeal Bowl

Let’s cut to the chase on these recipes from now on. My personal pet peeve is when I visit a recipe page after seeing the final product on Insta or Pinterest, to find that there’s a whole chapter I have to scroll through before I get to the damn ingredients list. Like, the picture has already convinced me to make [whatever it is], what more needs to be said?? 

Ok. For fear of being a hypocrite, here goes. Persimmon Oateal bowl. I make this/a variation of it at my office everyday and I get quite the few jealous stares. 

GATHER:

  • 1/2 cup rolled oats
  • 1 tsp maca powder (I use Anthony’s brand) 

  • Several dashes of cinnamon

  • 5-10 crushed almonds

  • 1 Brazil nut (to give you all your required selenium for the day!)

  • 1 cup water or unsweetened nut milk

  • 1 persimmon

  • 1 ripe banana (DO NOT go for any green ones. Preferably it has a few spots on it.)

  • 1/2-1 tbsp natural nut butter

  • Optional: 1 scoop Further Foods marine collagen peptides*

DO THIS

1. Combine oats, cinnamon, maca, collagen, nuts, half the banana mashed, 1/3 the persimmon, and water or milk in a microwave safe bowl (I’m obsessed with my ceramic mug bowl I got from Urban Outfitters, also oven safe!).  

2. Microwave 1-2 mins depending on microwave.  

3. Slice up the remaining persimmon and other half of banana top off the oats.  Finish with a drizzle of nut butter (the best part) for some extra healthy fats. Enjoy!
