Raw Celery Sunflower Seed Pesto

This is the EASIEST pesto you will ever make in your life, and I know this because this is the only pesto I have ever made in my life and I can't imagine it getting any simpler. 

RAW, VEGAN, PALEO, GLUTEN FREE, DAIRY FREE, STRESS FREE!

GATHER:

  • 4 stalks fresh celery, chopped
  • 4 tablespoons raw sunflower seeds
  • a handful of fresh cilantro, stems removed (about 1 cup loosely packed)
  • 1 tablespoon avocado oil (or EVOO)
  • 1 tablespoon water
  • 1 teaspoon minced garlic
  • salt and pepper to taste

DO THIS:

Blend all the above in a food processor or bullet blender and enjoy! Makes about 1 full cup of pesto. Store remaining in an airtight container in the fridge.

Perfect on pizza, (like my cauliflower crust pizza!), pasta, as a salad topper, on toasts, as a dip... heck its probably even good for your skin and hair so throw some on there too!
