Roasted Delicata Squash & Red Pepper Sauce

The best things always happen without much planning. This holds true for pretty much every area of life, but most recently for me in kitchen!

Delicata squash is my absolute favorite cuz it’s just so damn easy to cook and tastes insanely good with little to no seasoning. I made a really yummy sweet potato “Mac n cheese” a while back, so I figured if that was good then so would this. I was right! Yay! 

Whilst thoroughly enjoying this, I realized it would also make an insane soup if you add more water or broth, or a delicious toast spread if you add a little less. 

 

Healthy Delicata Squash & Roasted Pepper Sauce

5 ingredients (if you can even count water) 

This made just enough to cover for one large bowl of lentil pasta mixed with veggies (as shown)!

GATHER: 

- 1/2 cup roasted Delicata squash (see here for how I roast all my veggies) 

- 1/2 roasted red bell pepper

- 1-2 tbsp ripe avocado  

- 1 tbsp nutritional yeast (and any other seasoning you like)

- 1/4 cup water  

 

DO THIS: 

Blend in a nutribullet or food processor until smooth. Dollop onto your pasta and lick the blender bowl clean :P
